LOW-CARB Chocolate Cupcakes with Decadent Chocolate Ganache

Cupcakes

1 ½ sticks (170 g) unsalted butter, softened

¾ cup (145 g) Sola sweetener

3 free-range eggs

2 cups (190 g) finely ground almond flour, sifted

2 teaspoons baking powder

1 pinch salt

1/3 cup (40 g) good-quality cocoa powder

½ teaspoon vanilla extract

 

Chocolate Ganache

2 cups (480 ml) Heavy cream

2 cups (350 g) no-sugar-added chocolate chips (we recommend Lily’s brand)

1 teaspoon vanilla extract

¼ teaspoon sea salt

 

directions

1. Preheat the oven to 350F. Line a 12-cup muffin pan with 10 paper liners.

 

2. Make the cupcakes: Cream the butter and Sola sweetener together with a stand mixer or electric hand whisk, until light and fluffy, then add the eggs and mix well.

 

3. Sift the almond flour, baking powder, salt, and cocoa powder into the egg mixture, add the vanilla extract, and mix well.

 

4. Divide the mixture equally between the 10 cupcake liners.

 

5. Place the pan into the oven and bake for approximately 20 minutes until the cupcakes are risen and an inserted skewer comes out clean.

 

6. Cool the cupcakes fully before decorating.

 

7. Make the Ganache: place the chocolate chips into a heat-proof mixing bowl. Pour the heavy cream, vanilla, and salt into a saucepan and bring to the boiling point, then pour the boiling cream over the chocolate chips. Whisk well until the chocolate is melted and the mixture is smooth and glossy. Place the ganache into the refrigerator to chill for 45 minutes to 1 hour, until firm enough to pipe.

 

8. Pipe the chocolate ganache onto the cupcakes and serve. Store any leftovers in the refrigerator.

 

 

Chef’s Tip

• The cupcakes won’t rise as loftily as flour-based ones, and may sink a little in the middle, due to the heavy weight of the almond flour and the lack of gluten in the recipe. Once frosted however, you will have gorgeous little desserts!
