Oven temperature conversions
For all of my recipes I use regular sized leaf gelatin, personally this is because I find it easier and quicker to use. In the UK it’s easy to find, however in the USA it can be much harder to find at conventional supermarkets.
There are three types of gelatin commonly sold:
Regular sized leaf gelatin (this is sold in supermarkets to consumers)
Gelatin powder (the most common type available in the USA is Knox brand and comes in 7g envelopes)
Large sized leaf gelatin (this is often sold to the catering industry and may be sold in specialty stores, the large sized sheets are twice the length of the regular sized sheet –this type of gelatin is rarely found in supermarkets)
