Brioche French Toast with Strawberry compote and whipped cream
This is a great recipe for using up stale bread or brioche, the warm spicy flavored brioche which has a golden crust and a soft moist center is delicious with the warm strawberry compote and fresh whipped cream. It’s almost a dessert in my opinion; however, if it’s the weekend and you’re not eating this every day, why not indulge?

Prep time: 10 minutes
Cooking time: 10 minutes
4 free range eggs
½ cup (120 ml) whole milk
½ cup (100 g) white sugar
1 tablespoon vanilla extract
½ teaspoon ground cinnamon
8 thick slices of brioche or good white bread
½ stick (55 g) butter for frying
Enough whipped cream for 4 servings
For the strawberry compote
1 ½ cups (250 g) Fresh strawberries
1/3 cup (80 g) white sugar
a squeeze of lemon juice
1. Put the compote ingredients in a pan. Heat gently until the strawberries begin to release their juice then simmer for 2-3 minutes until a jammy consistency is reached, remove from the heat and allow to cool.
2. To make the French toast, mix together the eggs, milk, sugar and vanilla extract until the sugar has dissolved. Dip the bread in the egg mix so it is thoroughly coated. Fry the slices in the butter on a medium heat for approximately 1 – 2 minutes on each side until golden brown on both sides.
3. Serve the French toast with the strawberry compote and whipped cream.
You can use any type of soft fruit for the compote such as raspberries, blackberries or blue berries
For a slightly healthier alternative, try serving the French toast with Greek yoghurt instead of whipped cream
